Larger Portions, Better Ingredients at the Dawn on the Amazon Cafe

I never wanted to have the largest portions in Iquitos, and I still don’t. Other restaurants have already made that claim. I wanted to have the freshest, purest, healthiest food in Iquitos, and I still do. However, one of the complaints we heard the most was our portions were too small. We will not be hearing that complaint any more.

We are learning about the benefits of larger portions and better ingredients. Sometimes they go together, like when we order the baker to bake larger ciabatta bread loafs for sandwiches. Larger portions and better ingredients allow for larger sandwiches than we could make before. Our polls have shown that our guests are happier with hearty, two handed sandwiches.

Our better ingredients include;

  • Larger loaves of bread for larger sandwiches
  • Corn tortillas
  • Imported catsup
  • Imported canola oil
  • French wine
  • Four types of beer from a micro brewery in Huaraz
  • Salt of the Incas from Cusco
  • Whole grain quinoa
  • Imported curry spices
  • Sprouts
  • Tahini butter
  • Hummus
  • Yogurt
  • Granola
  • Cacao
  • Turmeric
  • Coconut milk
  • Almonds
  • Coconut yogurt
  • Spirulina
  • Mozzarella cheese
  • Blue cheese
  • Homemade pasta
  • Aguaje
  • Balsamic Vinegar
  • Sacha Inchi Seeds
  • Macambo Seeds
  • Sesame Seeds
  • Amaranth Grains

Did I mention sprouts and more sprouts?

Larger portions? We have them. For instance, now our fettuccine pasta plate starts out with 250 grams of cooked pasta before we even add the sauce, up from around 180 grams.

I’m positive that larger portions and better ingredients combined will equal more satisfied customers.
